Spiced Pumpkin Seeds
Pumpkin seeds are paleo-friendly, low-fat, and healthy for you. You can always just make roasted pumpkin seeds with some sea salt on top, but you might want something a bit more festive for Halloween night. After you’re done carving pumpkins, rinse off all your seeds and let them dry out on some paper towels. Once they are dry, put them in a bowl and toss with some coconut oil, cinnamon, nutmeg, and a bit of sea salt. You can now bake them as you normally would, for about 10 minutes. For a spicy pumpkin seed, use chili powder and cayenne pepper instead.
Pumpkin Butter Pecan Bars
These bars can be enjoyed as a snack or dessert, and are a great alternative to regular Halloween candy. You can also make them with dark chocolate chips if you approve of them with your version of the paleo diet, but they really don’t need the chocolate if you would rather not. To make the bars paleo, you are going to use coconut oil instead of butter, along with pumpkin butter and almond flour. If you want to make your own pumpkin butter, combine puree with allspice, cinnamon, ginger, sea salt, honey, and cloves. You will also combine baking soda and eggs, along with coconut sugar for taste. Also add in some pecans of course!
Pumpkin Pudding With Maple Pecans
If you want to have a nice pudding, you can combine pumpkin puree with coconut milk, grass-fed gelatin, maple syrup, spices, and cool water to make it. Combine the ingredients and let it cool completely for the pudding. You will then want to make some candied pecans with maple syrup, coconut oil, ground cinnamon, and some sea salt. Add the pecan pieces on top of the pudding when serving it.
Pumpkin Ice Cream
If your family enjoys ice cream, they are going to love this pumpkin ice cream while on the paleo diet! It is great to have Halloween night when watching movies on the sofa or after you finish with your pumpkin chili. To make the ice cream, chill some coconut cream or coconut milk overnight. You will also combine that with pitted dates, pumpkin puree, pumpkin pie spice, sea salt, and vanilla extract. Puree the dates in a food processor until smooth and combine with the other ingredients. Add them to a loaf pan and put in the freezer for a few hours. It will give you a mousse-like ice cream texture.
